  • 1 kg Chicken, cleaned and cut
  • 500g Jeerakasala Rice (or Basmati Rice)
  • 3-4 tbsp Culinary Creations Malabar Biryani Masala
  • 2 Onions, thinly sliced
  • 1 Tomato, chopped
  • 1 cup Thick Coconut Milk
  • 1 tbsp Ginger-Garlic Paste
  • Fresh Coriander and Mint Leaves
  • Lemon Juice
  • Ghee
  • Salt, to taste


  1. Marinate: Combine the chicken with the Malabar Biryani Masala, ginger-garlic paste, lemon juice, and salt. Set aside for at least an hour.
  2. Cooking the Rice: Soak the Jeerakasala or Basmati rice for 30 minutes, then cook until 70% done. Drain and set aside.
  3. Preparing the Chicken: In a large pot, heat ghee and sauté the onions until golden. Add the tomatoes and marinated chicken, cooking until the chicken is tender.
  4. Layering: Layer the cooked chicken at the bottom of a large pot, followed by a layer of rice. Sprinkle coconut milk, fried onions, and fresh herbs. Repeat the layers, finishing with a rice layer.
  5. Dum Cooking: Seal the pot with a tight lid and cook on a low flame for 40-50 minutes, allowing the flavors to meld.
  6. Serving: Gently fluff and mix the biryani before serving. Garnish with additional fried onions, nuts, and fresh herbs.
